Pav bhaji is a vegetarian fast food dish from Mumbai, India consisting of a tomato and vegetable gravy cooked with spices (bhaji) and served with a soft, buttery bread roll (pav). While bhaji is the traditional Indian name for a vegetable dish, pav (or paõ) is the Portuguese word for bread, which spread during their brief rule of Mumbai in the mid-1500s.
When you take a bite of pav bhaji, you’re enjoying a dish with a history that can be traced back to Indian textile mill workers in the 1850s. Their lunch breaks were too short for a full meal, and a heavy meal wasn’t optimal for doing strenuous physical labor. Pav bhaji was invented to fulfill these requirements — it was cheap, quick to prepare, and light yet hearty and nutritious.
Initially, the dish remained the food of mill workers, but over time it found its way into Mumbai restaurants, and eventually spread to the rest of India. Hundreds of years later, pav bhaji remains a late-night street food staple.

In the first step, the juicer grinds the produce into a pulp. Once the pulp is ready, it’s put in cloth press bags which are placed into the press. Two stainless-steel panels are pressed together, putting thousands of pounds of pressure on the pulp to extract every last drop of juice. No additional heat or oxygen is used in the process — this results in a juice that’s not only superior in flavor but also in nutritional value, containing up to five times the amount of vitamins, trace minerals, and enzymes as a typical centrifugally-produced juice.
The word “authentic” has a different meaning to every individual, but for us, it means going back — way back. We had to look back in history to create a traditional Tawa that’s specifically designed to cook pav bhaji. The tedious process of importing an original Tawa from Mumbai, India, and getting NSF certification in the US took over a year, hundreds of hours, and thousands of dollars. Finally, our patience paid off and the Tawa was approved. We’re truly excited for you to enjoy the taste of authentic pav bhaji!
